Health benefits from buckwheat are enormous, and since the crushed seed does not contain protein glutens,  the products can be consumed by those needing to avoid gluten.


 Holiday menus, snacking and leftovers can push the most health-conscious among us over the edge. Here is one holiday breakfast that will help correct any deviations.  This link at The World's Healthiest Foods. com (WHF), lists the health benefits of  buckwheat in it's many variations, from porridge to cereal.

Another study suggests that contrary to the previous notion that buckwheat is inflammatory, its components are highly anti-inflammatory: http://www.ncbi.nlm.nih.gov/pubmed/19060399. Regardless, cooking with turmeric and blueberries contribute to this recipe's anti-inflammatory properties.

 Adding coriander cancels out any bitterness from the turmeric, and the resulting marriage of the coriander with maple syrup is delicious!
  
Holiday Black Jacks

1 egg, beaten
1 cup 100 percent buckwheat flour
1 cup almond milk, rice milk, or low fat milk
I half cup, large fresh or  frozen blueberries
¼ tsp. baking powder
Equal parts coriander powder and turmeric (1/2 tsp. each is a good estimate)
Salt to taste
Oil an iron skillet with a little butter
Stir egg, milk, flour and all dry ingredients
Fold in the blueberries
Broken walnuts or pepitas optional
Drizzle with pure maple syrup and sprinkle with powdered sugar

Let mixture sit a few minutes while syrup from the blueberries mix with the batter. Buckwheat flour is naturally dark. The turmeric adds even more color, so these flap jacks turn quite dark.  Hence the name, “Black Jacks.”

Ladle mixture into hot butter and flip when edges begin to set.
Serve with pure maple syrup, powdered sugar and raspberries or cranberry relish for color.
